Undercut is the distance between the bottom the door and the bottom of the frame. Doors can undercut to provide clearance above the finish floor material. For fire-rated doors/frames NFPA allows a maximum undercut of 3/4", thus if there is finished floor material under the door, such as a 1/2 inch metal threshold or stone, etc., there would be a clearance of 1/4"...but a 3/4" undercut.
