The biggest problem with this plan is it is very compartmentalized. You might not need to necessarily make the kitchen bigger as much as open the plan to create a sense of the spaces being larger. The family, dining and kitchen could be opened up - don't worry about the chimney.
In the end, you need to hire an architect to help you. Bearing walls need to be determined, progression from space to space.... lots of things. You could hire an architect for schematic design only and then work with a builder or have the architect provide construction drawings also. Design services are like construction. You can select the level of service you need or are willing to spend.
This looks to be a pretty small space. I would recommend you read "The Not So Big House" by Sarah Susanka . It will give you and your parents lots of ideas about using this house to its fullest potential.

A floor plan only tells half the story, you need to know what is going on in section for any real positive movement to occur. I agree with the other response in that you need to hire an architect to take a look and see what can be done, first hand.
Good luck in your project, its an honest idea behind it and that is worth the whole process.
For some reason people don't want to call an Architect when they have design issues but will easily call a surgeon when they need a heart transplant.

I agree. On every type of job, even small jobs, professionals should be consulted. This, as errors can appear even in small, apparently unnoticed corners, details and layouts.
