As far as amperage is concerned, get a good electrical engineer to calculate the loads. It's not a square footage thing but based on the loads your house draws with all the eqpt., lighting and everything else taken into account.
Is this new construction or old?
If new, you have more choices to insulate your home with. Personally, we prefer icynene. It's good for the environment, great as far as air infiltration is concerned and acts as a vapor barrier and does not entrap moisture. Plus it depends on the design and what has been specified as your wall assembly.
If old, you'll be restricted by the existing conditions. You should get a good retrofit insulation contractor at that point.
You have a big house. Might be a good idea to talk to your local utility if they have a home energy audit program and get their advice. Some do that for free and others charge a minimal fee to cover expenses. It's in their interest that your home is energy efficient. Or hire good consultants.
Anyway, without knowing all the details, its hard to know what is appropriate.
