That's a pretty broad subject.

You'll have to be alot more specific to get an worthwhile help.

I suggest you get to know the friend of everyone who has questions: google.com

When I read the word "Restoration", that's my specialty...and we have very clear guidelines to follow...our virtual bible:

The Secretary of the Interior's Standards for the Treatment of Historic Properties

Technically we either refurbish or replace windows in these historic buildings. Refurbishing typically involves careful removal and repair as necessary. This is obviously the most costly approach but the most approriate. Like repairing an antique car, you want as much of the original pieces and parts to actually be original. That said, often times we simly cannot refurbish. Hence, we shop around for best options as most of the time, the client has a strict budget that limits what we can do. Not to mention todays windows have thicker frames and sashes, etc...surface applied muntins compared to putty glazed,...

...but for a higher cost, many manufacturers will build new windows to match the existing profiles.

That said, the issue of heat gain/loss is simply not something you will gain with single pane plate glass. If you determine that it is appropriet to replace the windows, go with the insulated glazing in a new frame.
